How the hunt works

Save just before the gift dialogue, accept, then check the Pokémon in your party. If it isn't shiny, reset and repeat. Some gifts are shiny locked and can never be shiny.

The base rate in Pokémon Ultra Moon is 1 in 4,096. The Shiny Charm is available in this game and adds two extra shiny rolls.
